Coffee Chronicles 006

"Official" tasting notes and background information.

The Beans

Like yesterday, I get a whiff of sweetness with some chocolate off of the open bag.

Brewing Method AeroPress

I am following James Hoffman's "The Ultimate AeroPress Technique". 11 grams of coffee and 200 grams of water. Steep 2 minutes, then swirl and let settle for 30 seconds before fully pressing it through.

The coffee has a brown, almost milk chocolate like colour with only a whiff of sweetness coming off of the cup.

First sip brings out... little actually, a hint of bitterness. As a friend put it about some of the other ones: Tastes like Coffee. It's probably more pallet than the coffee itself.

As the coffee cools it turns more into a milk chocolate colour and more of the sweetness comes forward, with the bitterness receding. There are a few hints of chocolate in there as well, with some acidity closing it out.

Pleasant, if not very "wow".

Brewing Method French Press

This is a bit surprising to me. Yesterday's difference was somewhat stark, with the French Press bringing out a much more dominant flavour than the AeroPress. Today it's almost the inverse. I find the French Press to be smoother / cleaner.

Not sure if I prefer it over the AeroPress, they are both very close.
