The Beans

I am getting hit with a lot of fruit and flower flavours as I smell the beans. It is a very interesting experience, almost overwhelming.
The beans are a darker milk chocolate colour and pretty uniform.
Brewing Method AeroPress
I am following James Hoffman's "The Ultimate AeroPress Technique". 11 grams of coffee and 200 grams of water. Steep 2 minutes, then swirl and let settle for 30 seconds before fully pressing it through.

This is a really interesting brew. I get a mouth full of fruit and quite "annoyed" with myself that I struggle to seperate them out.
So I am cheating here and looking at the tasting notes and I see they cheated too. "Juicy" is a good description and I do get a hint of the cherry, but totally strike out on the Apricot.

Curiously this mellowed it out even more, the cherry notes are gone and instead I just get "juicy" together with "chewy". I like this slightly better as it feels more substantial.
